This iconic restaurant became my culinary home, where contemporary Peruvian haute cuisine merged with global influences, pushing me to explore and perfect techniques and flavors that decisively transformed my career.
Under the creative vision of Gastón Acurio, each day was a challenge filled with learning, where we not only elevated Peruvian cuisine to new heights but also shared the country's rich culture with the entire world.
Gastón Acurio showed me that humility and simplicity, along with appreciation and respect for ingredients, are the most important values.
This was a crucial stage in my career, allowing me to expand my horizons and leave a mark on the international culinary scene.

My Best Culinary Experience
During my time at Astrid y Gastón, I had the honor of being part of one of the most innovative and renowned kitchens in the global gastronomic scene. This iconic restaurant, based in Lima, Peru, not only provided me with a platform to refine my technique but also allowed me to immerse myself in the richness of Peruvian culture and its incredible flavors, discovering native ingredients that transformed my approach to cuisine. A part of my heart will always belong to Peru.
I recall one occasion when we welcomed an international delegation of chefs, several of whom held Michelin stars, eager to discover the soul of Peruvian cuisine. Together with Gastón, we had the opportunity to showcase iconic dishes like classic ceviche and causa limeña, but with elevated versions that played with modern techniques while respecting the essence of each ingredient. It was impressive to see the reaction of these culinary masters as they tasted dishes so rich in history but presented in a contemporary way. For me, it was a revelatory moment: understanding that our mission was not just to cook, but to tell stories through each dish.
Each day at Astrid y Gastón was a creative challenge and an opportunity to continue learning. One of my most rewarding memories was creating a tasting menu inspired by the regions of Peru. We worked with ingredients I had never encountered before, such as fresh ají amarillo, chuño—a type of dehydrated potato used in the Andes—and carapulcra. This experience not only expanded my culinary repertoire but also made me understand the depth and complexity of Peruvian cuisine, its ability to innovate while keeping its traditions alive.
Without a doubt, it was a stage that marked my career. Working at Astrid y Gastón taught me that gastronomy knows no borders, that flavors are a way to connect cultures, and that in every dish, we can reflect the passion, history, and pride of a country.
Working alongside Gastón Acurio, Astrid Gutsche, and the entire team at Astrid y Gastón Lima was a life-changing experience, where the commitment to excellence and creativity was always at the heart of everything we did.
