Originating in the highlands of Mexico, its cultivation is believed to have begun over 5,000 years ago, although its consumption dates back over 10,000 years. In Aztec culture, this fruit, known as ahuacatl , was not only a food, but also a symbol of fertility and vitality. Imagine how special it must have been for them! The arrival of the Spanish marked the beginning of their journey to Europe and the rest of the world, winning the hearts of different cultures for its flavor and versatility.

Avocado is a nutritional gem. A rich source of vitamins such as K, C, B5, B6 and E, it also contains folate and more potassium than bananas. Its monounsaturated fat content is beneficial for the heart and helps reduce inflammation.

Personal tip: I always suggest pairing avocados with foods rich in vitamin C, such as tomatoes or lemons. This not only enhances their flavor, but also improves the absorption of iron in our body. Plus, it's a great ingredient for people looking for healthy spread alternatives to butter.

Guacamole

Guacamole is, without a doubt, the king of avocado preparations. A classic recipe that never fails includes ripe avocados, lemon juice, onion, cilantro, tomato and chili peppers. But here's a special tip: if you want to give it a different touch, try adding pomegranate or chopped mango. The combination of flavors is spectacular.

Slices in Tacos and Enchiladas

Few things can compete with the sensation of a slice of fresh avocado inside a taco or enchilada. That creamy touch that balances the spicy and piquant flavors is pure magic.

Chef Tip: If you want your tacos to look professional, cut the avocado into thin slices and arrange them in a fan shape. Visually impressive and delicious!

Soups and Sauces

Avocado can also be the star of cold soups and sauces. Blended with a little Greek yogurt, lemon juice and fresh herbs, it becomes an ideal sauce to accompany seafood or grilled vegetables.

Selection: Choose avocados that give slightly when pressed. Avoid those with black spots or excessive soft areas.

Ripening: If avocados are green, place them near bananas or apples to speed up ripening. The release of ethylene from these fruits helps them ripen faster.

Storage: Ripe avocados are best kept in the refrigerator. Once cut, apply lemon or lime juice and wrap in plastic to prevent browning.

Bonus tip: If you have leftover guacamole, pour a thin layer of water over it before storing. This will prevent it from turning brown.
