Global trends and current diets have also influenced tamale creativity. Vegan tamales, with mushroom, spinach or sweet potato fillings, are popular options, while sweet tamales, once rarer, now include combinations such as dulce de leche, pineapple and chocolate.

Ingredients:

  • Fresh masa or corn flour (masa harina) prepared according to package directions.

  • Corn leaves (soaked and softened) or banana leaves (slightly warmed).

  • Filling of your choice: pork, mole, roasted vegetables, or sweet versions such as chocolate with cinnamon.

  1. Achieve the Ideal Dough Texture: The dough should be light and airy. Test by placing a little dough in a glass of water; if it floats, it is ready. If it sinks, add more butter or vegetable oil and beat again.

  2. Layers of Flavor: For savory tamales, season both the filling and the dough. For sweet tamales, add vanilla extract, cinnamon or citrus zest to the dough.

  3. Steaming: Use a steamer or a pot with a steamer insert. Place a layer of leaves on the bottom to prevent the tamales from sticking together and be sure not to overcrowd the pot.

Quick Recipe:

  • Spread the dough over the prepared leaves, add a spoonful of filling in the center and fold the leaves carefully.

  • Place the tamales upright in the steamer and cook for 1 to 1.5 hours, checking periodically to add water if necessary.

  • Let the tamales rest for 10 minutes before serving.
