Mole Coloradito is one of the seven iconic moles of Oaxaca, and its origins date back to the Zapotec and Mixtec civilizations. The term "mole" comes from the Nahuatl word mulli , meaning sauce or mixture. Before the arrival of the Spanish, moles were prepared with chili peppers, herbs, and other local ingredients.

With colonization came spices such as cinnamon, cloves and cumin, as well as chocolate, ingredients that transformed and enriched pre-Hispanic recipes. Mole Coloradito , with its characteristic deep red color and slightly sweet and spicy flavor, represents this fusion between indigenous and European traditions, becoming a jewel of Oaxacan cuisine.

Preparation of Mole Coloradito

  • Toast the spices and seeds: In a dry frying pan, toast the sesame seeds, peanuts and almonds until they release their aroma.

Step 2: Mix the flavors:

  • Blend the soaked chiles together with the tomatoes, garlic, onion, spices and a little chicken broth or water until smooth.

  • In a large saucepan, heat some butter or oil and fry the mixture, stirring constantly.

Step 3: Integrate the chocolate:

  • Add the chopped chocolate to the mixture, allowing it to melt slowly and fully incorporate. Cook over low heat for at least 30 minutes, adjusting the seasoning with salt and sugar if necessary.
